Description
Egusi Soup is a rich and hearty soup made with ground melon seeds, assorted meat, leafy greens, and delicious African spices. It’s usually served with pounded yam or fufu.
Ingredients
- 1 cup ground egusi (melon seeds)
- Beef, stockfish, or goat meat
- 1/2 cup palm oil
- Crayfish, pepper, and seasoning
- Chopped spinach or fluted pumpkin leaves
Steps
- Cook meat and stockfish until tender.
- Fry egusi in palm oil until slightly thickened.
- Add stock and allow to simmer.
- Add meat and crayfish.
- Stir in vegetables and simmer for 5 more minutes.
